Chicken, Corn, Sour Cream fajitias Recipe

A wonderful slow cooker concoction for those cold winter days. Serve in tortillas or over corn bread muffins.

Ingredients
  • 4 chicken breasts (boneless)
  • 16 ounces jar of salsa
  • 1 can black beans
  • 1 can pinto beans
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons chilli powder
  • 1 can whole kernal corn
  • 8 ounces sour cream

  • Place chicken breasts, salsa, and spices in crock pot on low heat. Cook 4 hours.
  • Use two forks to shred chicken then add beans and corn.
  • About an hour before serving, cut cream cheese into chunks and stir into cooker.
  • Cook about another hour until all ingredients are warm and incorporated
