A delicious version of the classic comfort food, which contains potatoes, Velveeta cheese, bacon, carrots, celery, onion, garlic, butter, milk, water, bouillon cubes, salt, pepper, and mashed potato flakes.

12 medium russet potatoes, peeled and cubed into about 1/2 inch pieces
3 stalks celery , chopped
2 medium carrots, chopped
1 small onion, chopped
1 clove garlic , minced
1 stick butter
1/2 pound bacon , chopped
1/2 pound Velveeta cheese block, cubed
1/3 cup instant mashed potato flakes
3 chicken bouillon cubes
4 cups water
3 cups milk
Salt and pepper
In large saucepan, fry bacon on medium high until golden brown and crispy.
Add butter and melt; add celery, carrots, onions, and garlic. Saute on medium/high for 2 minutes.
Add potatoes, water, bouillon cubes, milk, salt, and pepper.
Simmer on medium/low for 20 minutes.
Add cheese and simmer stirring occasionally until melted.
Add mashed potato flakes and simmer for another 5 minutes.
Add more milk or more potato flakes to desired thickness.
