Mexican Grilled Chicken Recipe

This was inspired by combining a few of my family's favorite meals, Chicken Parmigiana and chicken quesadillas.

1 package Fajita Mix
2 chicken breasts
1 cup fresh salsa
1 cup Mexican style shredded cheese
Fillet the two chicken breasts, so that you have (4) pieces.
Coat the pieces of chicken with oil; then sprinkle the fajita mix evenly on the chicken breasts. Rub it in evenly.
Optional - place the seasoned chicken in a plastic bag and let it sit in the refrigerator for a few hours to marinate.
Cook the chicken on the grill.
Move to top rack temporarily and put a piece of foil on the main rack of the grill and transfer grilled chicken onto it. (This helps keep salsa and cheese from falling into the grill.)
Generously cover each piece of chicken with salsa and sprinkle desired amount of cheese of top.
Close cover and leave on grill until cheese is melted.
Remove and serve.
