Microwave Caramel Popcorn Recipe

Use this quick and easy recipe for the holidays or anytime. This caramel popcorn has a light coating that melts in your mouth. No long oven time or big roaster pan needed. And the kids have fun doing the shaking!

  • popped corn (from approx 1 cup unpopped) in a brown paper grocery bag
  • 1 cup brown sugar
  • 1/2 cup white corn syrup
  • 1/2 cup margarine
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
Combine all ingredients except soda & popped corn in a medium sauce pan.

Bring to a boil and cook on high for 2 minutes, stirring constantly.

Add soda and quickly stir as it foams.

Pour over the popped corn in a brown bag and shake the bag.

Roll top of bag closed and place in microwave. Cook for 90 seconds.

Shake bag and cook for another 90 seconds.

Shake and cook for 60 seconds.

Pour and spread out onto a cookie sheet.

Once cool, break apart and store in a sealed bag or container.
