Fish Cakes Recipe

Never know what to do with leftover fish? Try this recipe. And with the fish it's much more budget-friendly than crab. Sometimes I will grill or poach the fish.

Ingredients
  • 1 pound white fish, cooked and flaked
  • 1 red pepper, diced
  • 4 green onions, sliced
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black peper
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • 2 tablespoons olive oil

In a medium bowl, combine fish, pepper, onions, seasonings and eggs. Place bread crumbs in a shallow dish. Heat oil in a large skillet over medium heat. Form fish mixture into patties using 1/2 cup for each. Dredge in bread crumbs. Place in skille and cook 5-6 minutes or until golden brown, turning once.

"My son in law caught sea bass but asked for fish cakes! Never cooked them before but this recipe was a hit!! Easy, quick and very tasty!! I doubled the recipe because we had alot of fish but wow, it was great. Easy for me, a great meal for the family!!"
