Super Summer Eggs Benedict Recipe

A summery twist on the classic eggs benedict.

  • 1 each english muffin
  • 2 each large eggs
  • 1 each avocado
  • 2 slices turkey breast
  • 1 cup raw flat leaf spinach
  • 1 tablespoon hollandaise sauce
  • 1 tablespoon malt vinegar
  • 1/4 teaspoon fresh black pepper
  • 1 tablespoon butter
  • 1/2 teaspoon sunflower oil
  • 2 cups water
In a medium sauce pan, saute spinach in butter and sunflower oil. When spinach is fully cooked, fold in about 1 teaspoon of malt vinegar and black pepper, set aside. Lightly toast english muffin. Top english muffin with spinach. Place one slice of turkey breast on top of each muffin. Slice avocado and coat lightly with malt vinegar. Place a few slices of avocado on top of the turkey. In a medium pot, poach two eggs in water over medium heat. When eggs white are firm and yolk is still soft, remove from water and place on top of avocado. Spoon hollandaise sauce over the top. Goes great with fresh fruit! Enjoy!
