Mexican Cornbread 65 Recipe

Ingredients
  • 1 pound hamburger
  • 1 chopped onion (small)
  • sliced jalapeno peppers
  • 1/2 pound grated Cheddar cheese
  • 1/2 pound grated American cheese
  • 2 1/2 cups self-rising cornmeal
  • 1 1/2 cups buttermilk
  • 2 Eggs
  • 1 can cream style corn (small can)
Directions
Brown hamburger and onion, drain. Mix cornmeal, buttermilk, eggs and cream style corn. (I usually use box cornbread mix. I prefer Miracle Maize Sweet Cornbread mix. I mix the entire box according to the directions and add 1 small can of cream style corn.) Pour half of cornbread mix in greased 9x13 pan; top with browned hamburger and onion. Next add jalapeno peppers (I usually chop up the sliced ones so you don't get such a hit of hot peppers; use as many as you like. Sprinkle the grated cheese over all Use a spoon and drop the remaining cornbread batter over the top. It is hard to spread but try to cover the entire top. Bake at 350 for 30 to 45 minutes or until browned. Serve with Cheese Sauce.
