ZUCCHINI MEATLOAF Recipe

Ingredients
  • 2 tablespoons vegetable oil
  • 3 cups shredded zucchini
  • 1 1/4 cups shredded cheddar cheese
  • 1/3 cup bread crumbs
  • 2 teaspoons salt, divided
  • 2 pounds ground beef
  • 1 teaspoon Thyme
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Dill
  • 3 slices Bacon
  • 1 can seasoned tomato sauce, divided (8 ounce can)
Directions
Sauté zucchini in hot oil 3-4 minutes. Remove zucchini to a large bowl and add cheese and bread crumbs and 1 teaspoon salt. Mix well. In another bowl, mix together beef, thyme, dill, pepper, and 1 teaspoon salt and 1/2 can tomato sauce. On a sheet wax paper, make a 10 inch square of meat mixture pressing it out to 3/4 inch thick. Spread zucchini mixture over the meat, leaving a margin of the meat around the edge. Gently roll up the meat, removing the wax paper as putting in the pan. Place roll seam side down in the pan. Spread remaining tomato sauce over the meat. Lay bacon strips over the meat roll. Bake about 350 degrees for 1 1/2 hours or until done.
