Marinated Mushrooms Recipe

Great appetizer that you can make in advance. The longer the mushrooms marinate, the better.

Ingredients
  • 2 bay leaves
  • 1 tablespoon peppercorns
  • 1 teaspoon mustard seeds
  • 4 cloves garlic
  • 1 jalapeno pepper
  • 1 red onion , chopped
  • 1/4 cup fresh parsley
  • 2 tablespoons fresh thyme
  • 1/2 cup white wine vinegar
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tablespoon sea salt
  • 1 pound fresh mushrooms
  • 3 tablespoons extra-virgin olive oil

  • In a food processor, add the bay leaves, peppercorns, mustard seeds, garlic, chile, onion, parsley, and thyme. Pulse into a paste.
  • In a small saucepan, place vinegar, water, sugar and salt over medium heat. Simmer until sugar is dissolved.
  • Add the seasoning paste and simmer for 1 to 2 minutes. Place the mushrooms in a container and pour the hot liquid over it. Cover and steep at least 1 minute.
  • When ready to serve, stir and drizzle with extra-virgin olive oil.
