1 Cook's Quartered Spiral Bone-In Ham
6 medium peaches, peeled, chopped
1 small red onion, finely chopped (about 1/2 cup)
1/4 cup firmly packed brown sugar
2 cups fresh lemon juice
1 olive oil
1 finely chopped fresh mint
1 serrano chile pepper, seeded, finely chopped
1/8 Ground black pepper
dash five-spice powder
Combine peaches, onions, sugar, lime juice, oil, mint, chile pepper, salt, black pepper and five-spice powder in medium bowl. Let stand at least 30 minutes.
Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat. Grill quartered spiral bone-in ham according to preference.
Place ham on serving platter; top individual pieces with the peach mixture.
