1 package (20 ounces) frozen fully-cooked hash browns
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 can (16 ounces) sauerkraut, drained, squeezed dry
1 cup Thousand Island dressing
1 1/2 teaspoons caraway seeds, crushed
1 package (16 ounces) Swiss cheese slices
2 pounds Cook's® Corned Beef, cooked, cut into 1/2-inch cubes
Preheat oven to 450°F. Spray 13x9-inch baking dish with cooking spray. Add hash browns; spread to evenly cover bottom of dish. Sprinkle with salt and pepper. Bake 15 to 20 minutes, or until heated through.
Spread sauerkraut over potatoes. Drizzle with dressing; sprinkle with caraway seeds. Top evenly with corned beef and cheese.
Bake 15 to 20 minutes, or until casserole is heated through and cheese is melted.
