Ham and Egg Breakfast Bake Recipe

  • 1 1/2 cups finely chopped leftover Cook's® Bone-in Ham or Ham Steak
  • 12 eggs
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 3/4 cup chopped red bell pepper
  • 1/2 cup sliced mushrooms (about 4 ounces)
  • 1/2 cup sliced green onions
  • 1 cup (4 ounces) shredded Cheddar cheese
  • Preheat oven to 325°F. Spray 13x9-inch baking dish with cooking spray. Beat eggs, milk, sour cream and salt in medium bowl with wire whisk until well blended.
  • Add ham, bell peppers, mushrooms and onions; mix well. Pour into prepared baking dish.
  • Bake 50 minutes, or until knife inserted in center comes out clean. Sprinkle with cheese. Bake an additional 3 minutes, or until cheese is melted.
