1 Cook's® Bone-in Thick Cut Ham Steak (about 2 pounds)
2 teaspoons olive oil
2 cloves garlic, minced
1 shallot, chopped
1 jar (20 ounces) peach marmalade
2 tablespoons Dijon Mustard
2 tablespoons rice wine vinegar
3 tablespoons chipotle sauce
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Heat oil in medium skillet over medium heat. Add garlic and shallots; cook until tender, stirring occasionally. Stir in marmalade, mustard, vinegar, chipotle sauce, salt and pepper. Cook 15 minutes, stirring occasionally; set aside.
Prepare grill for medium heat.
Grill ham steak 5 minutes; turn over. Brush with half of the marmalade mixture; continue grilling 10 minutes, or until ham reaches an internal temperature of 160°F when tested in center with meat thermometer, turning and brushing with the remaining marmalade mixture after 5 minutes.
