4 cobs of corn, with husks
1/4 cup butter
2 tablespoons chopped fresh chives or green onion tops
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Prepare corn for grilling. Peel back husks, leaving husks attached to base of cob. Remove and discard corn silk from ear of corn. Reserve a thin strand of inner cornhusk from each cob; bringing attached husks back up over each ear; tie with reserved strips of cornhusk. Soak corn in cold water to cover at least 20 minutes.
Preheat grill according to manufacturer directions.
Combine butter, chives, salt and pepper in small bowl to make spread; mix well. Refrigerate until ready to use.
Drain water from corn. Keeping husk intact around corn cobs; place cobs directly onto grill grid over medium heat. Grill 20 to 25 minutes or until corn is tender, turning twice. Carefully pull back, twist and remove husks; spread with chive spread.
