1 package Premio Sweet Italian Sausage (or any favorite Premio sausage flavor) cut into 1-inch pieces
2 large onions cut into 1/2-inch wedges
2 large peppers cut into 1/2-inch strips
1 1/2 jars (16 oz.) Chi-Chi's Mild Salsa
1 package Light and Fluffy Medium Egg Noodles
grated Parmesan cheese
olive oil or cooking spray
Fill large pot with water and heat on medium (for cooking noodles).
Add olive oil to a large skillet or spray the skillet generously with cooking spray.
Add sausage, peppers, and onions.
Cover and cook over medium heat, stirring occasionally until sausage is just about done, about 15 minutes.
Cook another 5 minutes uncovered.
Reduce the heat under the skillet to low and add the salsa. Stir well to combine the sausage, peppers, onions, and salsa.
While the sausage and vegetable mixture is simmering, add the noodles to the pot of boiling water. Cook until tender.
Serve the sausage, peppers, and onions over a small bed of noodles and top with some grated Parmesan cheese.
