6 large slices white bread
1/2 cup salsa
1/3 cup cheddar cheese - shredded
6 broiled Premio Hot Sausages
2 tablespoons olive oil
1 cup jicama - peeled and cut into julienne strips
1/2 cup corn kernels - cooked
1/4 cup roasted red bell pepper - chopped
2 tablespoons sliced black olives
1 jalapeno pepper - seeded and minced
1 green onion - minced
1 tablespoon cilantro - snipped
1 tablespoon lime juice
1/4 teaspoon garlic salt
Cut the crusts from the bread.
With a rolling pin roll bread slices to make them flexible.
Spread salsa on one side of each bread slice, and then sprinkle on the cheese.
Place a cooked sausage at the top of each bread slice.
Roll up firmly seam side down on a baking sheet.
Secure each roll with a pick, then brush the top and sides with the oil.
Bake at 375 degrees F. 10-12 minutes or till the bread is golden brown and crisp.
Combine the ingredients for the relish in a small bowl till well mixed.
Remove the picks from the sausage wraps and serve topped with some relish.
