3 tablespoons olive oil
16 ounces Premio Hot Italian sausage Links - thawed
2 tablespoons butter
1 large onion
2 Granny Smith apples - cored, peeled and sliced into thin wedges
3 tablespoons apple cider or rice wine vinegar
2 tablespoons brown sugar - packed
salt and pepper to taste
4 hoagie rolls
Warm olive oil in a large skillet over medium high heat.
Cook the sausage links in the olive oil until browned.
Remove from skillet and drain on paper towels.
In a large skillet over medium heat, melt the butter and stir in the onions.
Cook the onions until translucent.
Stir in the apples, brown sugar and vinegar.
Gently stir the mixture while cooking until caramelized, approximately 15 minutes.
Season with salt and pepper.
Place a split hoagie roll on a plate, top with a sausage link and some of the caramelized apple and onion mixture. Add some mustard and serve.
