Hearty Stuffed Green Peppers Recipe

Here is a delicious stuffed pepper recipe that's worth the time to make. Each green bell pepper contains ground beef, onion, tomatoes and rice with a tomato sauce full of flavor over the top.

  • 4 green peppers, tops taken off and seeded
  • For Sauce:
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 tablespoons parsley, minced
  • 28 ounces whole tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup water
  • 2 cloves garlic
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3/4 teaspoon basil, crushed
  • For Filling:
  • 1 pound ground beef
  • 8 ounces tomato sauce
  • 3/4 cup cooked rice
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon cloves

  • Bring a large pot of water to a boil. Cut the tops off the peppers, remove the seeds and rinse. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set upside-down on paper towels to cool.
  • In a large saute pan, heat oil over medium heat. Saute onion and parsley unt tender.
  • Add tomatoes, tomato paste, water, and seasonings. Simmer 30 minutes.
  • Preheat oven to 350 degrees.
  • In another large saute pan, brown ground beef; drain. Remove from heat.
  • Stir in tomato sauce, rice, breadcrumbs, egg and remaining seasonings.
  • Fill peppers with meat mixture and place in baking dish. Pour sauce over peppers.
  • Cover and bake for 1 hour.
