Lentils and Sausage Recipe

  • 1 onion - cubed
  • 3 garlic cloves - crushed
  • 2 tablespoons olive oil
  • 1 red pepper - cubed
  • 32 ounces tomato sauce
  • 2 cups lentils - soaked for 24 hours
  • 1 package Hot Italian Sausage - sliced in rounds (or preferred flavor of sausage)
  • salt and pepper to taste
  • cayenne pepper to taste (optional)
  • hot pepper flakes to taste (optional)
  • In a large pot saute onion and garlic in oil until almost brown.
  • Add peppers and saute for 1 minute.
  • Add tomato sauce and bring to boil.
  • Place lentils and sausage in pot and lower heat to simmer.
  • Add all preferred spices and simmer for 45 min to 1 hour.
  • Cover pot.
  • If during the simmering the sauce starts to dry, add a little water.
