Cheesy White Chili Recipe

  • 1 pound white northern beans
  • 6 cups chicken broth
  • 1 teaspoon chicken bouillon
  • 2 onions chopped
  • 1 tablespoon oil
  • 6 - 8 cloves garlic (minced)
  • 7 ounces jar green chilies (chopped)
  • 4 teaspoons cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon cayenne pepper
  • 4 cups cooked chicken
  • 1 cup sour cream
  • 3 cups shredded jack cheese

  • Combine beans, broth, and bouillon in large pot. Simmer 15 - 20 minutes.
  • Sauté onion until golden in oil. Add onions, garlic, chilies, cumin, oregano, cayenne and chicken to bean mixture. Simmer 30 minutes.
  • Add sour cream and cheese. Heat until cheese melts.
  • Garnish with sour cream, cilantro, green onions or chopped tomatoes.
  • May be frozen before adding sour cream and cheese.
