1 tablespoon vegetable oil
1 1/2 pounds stewing beef
1/2 cup chopped onion
1/2 cup sliced celery
3 cups beef broth
2 medium potatoes cut into small pieces
1/2 cup lima beans
1 cup apple juice
1/2 cup frozen corn
12 ounces small white onions, drained or 1 dozen frozen, thawed
Salt and pepper to taste
2 tablespoons flour
2 tablespoons cold water
:Enameled Roasting Pan
Using covered enameled roasting pan or Dutch oven add chopped onion, celery, potatoes, beef broth, beef, oil, flour, water, salt, and pepper.
Place in oven at 350. for 1 to 1 1/2 hours.
Then add the carrots, lima beans, white onions, corn, and apple juice. Place back in the oven for about 30 to 40 minutes longer or until vegetables are tender.
When done, add additional flour or water to thicken or dilute as needed before serving.
Serve with hot buttered biscuits or cornmeal muffins. Serves 4 to 6.
You can substitute wine with the apple juice.
