Sausage Tortellini Soup Recipe

  • 1 pound sausage
  • 2 cloves garlic
  • 1 cup onion chopped 5 C. beef broth
  • 1/3 cup water
  • 1/2 cup red wine
  • 2-3 C. tomatoes chopped (may use canned tomatoes)
  • 1 cup carrots sliced
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 8 ounces can tomato sauce
  • 1 1/2 cups zucchini sliced
  • 2 cups tortellini
  • 1 1/2 tablespoons dried parsley
  • 1 green pepper chopped

  • Brown sausage with garlic and onion; drain.
  • Add beef broth, water, wine, tomatoes, carrots, basil, oregano, and tomato sauce.
  • Bring to a boil in large saucepan, reduce heat and simmer uncovered for 30 minutes.
  • Stir in Zucchini tortellini, parsley, and green pepper. Cover and simmer 35- 40 minutes.
  • Serve sprinkled with parmesan cheese and garlic toast.
Note: Cheese filled tortellini work well for this recipe.
