Caramel Apple Salad Recipe
Apples, caramel pieces and pineapple coated in a sweet thick glaze. Delicious for all those caramel apple lovers.

6 apples, chopped
1/2 cup caramels, cut into small pieces
1 cup peanuts, chopped
1 can crushed pineapple (20 ounce can)
2 tablespoons flour
1 cup sugar
2 tablespoons apple cider vinegar
1/2 cup pineapple juice
2 eggs, beaten
8 ounces whipped topping
Chop apples & soak in lemon juice plus enough water to cover while making dressing.
Combine flour, sugar, vinegar, pineapple juice, and eggs. Cook for a few minutes until it thickens.
When cool, add the whipped topping.
Cut caramels into bite size pieces.
Drain apples well; add peanuts, pineapple, caramels, and dressing.
Pour into a serving dish.

freshly grated ginger
juice from 1 orange

frozen whipped topping
light sour cream
