Fried Rice with Chicken or Shrimp Recipe

Ingredients
  • 2 tablespoons olive oil
  • 1/2 cup water
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 1 small onion
  • 4 servings Morningstar Chicken or shrimp
  • 2 tablespoons butter
  • 3 large eggs
  • 2 cups cooked brown rice
Directions
  • Add olive oil and water to a large pan; bring to a simmer.
  • Slice peppers and onion; add to pan.
  • Stir until water is gone and veggies start to brown.
  • Remove from pan and set aside.
  • Cut meat into bite size pieces and brown in pan. Set aside with veggies.
  • Add butter to pan and let melt; beat eggs and add to pan, add cooked rice. Cook for 5 minutes, stirring often.
  • Add meat and veggies and cook until all is warm.
