Vanilla Pudding Oatmeal Cookies Recipe

  • 1 cup butter flavored shortening
  • 3/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 package instant vanilla pudding mix (3.5 ounce package)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 1/2 cups rolled oats
  • 1 cup white chocolate or vanilla chips

  • Preheat the oven to 350ºF.
  • In a large bowl, cream together the shortening, brown sugar, and white sugar until smooth.
  • Blend in the instant pudding; then beat in the eggs and vanilla until the batter is light and fluffy.
  • Combine the flour, baking soda, salt, and cinnamon; then blend this dry mixture into the batter.
  • Stir in the oats and chips.
  • Drop the dough by spoonfuls onto a cookie sheet. Bake for 8 to 12 minutes in the preheated oven, or until firm. Cool on wire racks.
