1 cup butter flavored shortening
3/4 cup packed brown sugar
1/4 cup white sugar
1 package instant vanilla pudding mix (3.5 ounce package)
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 1/2 cups rolled oats
1 cup white chocolate or vanilla chips
Preheat the oven to 350ºF.
In a large bowl, cream together the shortening, brown sugar, and white sugar until smooth.
Blend in the instant pudding; then beat in the eggs and vanilla until the batter is light and fluffy.
Combine the flour, baking soda, salt, and cinnamon; then blend this dry mixture into the batter.
Stir in the oats and chips.
Drop the dough by spoonfuls onto a cookie sheet. Bake for 8 to 12 minutes in the preheated oven, or until firm. Cool on wire racks.
