Cowgirl Cookies Recipe

A chewy but crispy cookie. With white chocolate chips and craisins added, it is loaded with flavor. This may end up being you favorite oatmeal cookie.

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup butter
  • 1/2 cup vegetable oil
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups quick cooking oats
  • 1 cup Craisins
  • 1/2 cup white chocolate chips

  • Preheat the oven to 350° F (175° C).
  • Sift together the flour, baking powder, baking soda, salt and cinnamon; set aside.
  • In a medium bowl, cream the butter, oil, brown sugar, white sugar and vanilla until smooth. Beat in the eggs one at a time.
  • Gradually stir in the sifted ingredients until well blended; mix in the oats, Craisins and chips.
  • Drop a small scoopful onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Let set up on the cookie sheets for a few minutes before transferring to wire racks to cool completely.

"I made these cookies this last weekend. They were really soft coming out of the oven and it was kind of hard to get them off the cookie sheet and not tear them apart. But other than that they were excellent. My husband and I loved the mix of white chocolate and the Craisins. The cookies were kind of chewy but crispy too. We loved them!"
