Ingredients
1 pie crust
3 cups rhubarb - diced
1 1/2 cups sugar
1/4 cup flour
1/4 teaspoon salt
3 eggs - separated
1 cup cream
6 tablespoons sugar

Preheat oven to 350° F.
Place rhubarb in unbaked pie shell.
Mix sugar, flour, salt, egg yolks and cream.
Pour over the rhubarb.
Bake for 1 hour.
Mix egg whites and remaining sugar in a cold glass bowl until stiff peaks form.
Place meringue on top of pie and use the back of a spoon to create peaks.
Return to the oven to brown.
