Buffalo Chicken Salad Recipe

The spiciness of the grilled chicken is a perfect complement to the cool, refreshing salad ingredients and the tangy flavor of the blue cheese dressing in this tasty dish.

  • 2 chicken breasts - boneless, skinless
  • 4 tablespoons hot sauce
  • 1 tablespoon olive oil
  • 8 cups lettuce - red leaf or favorite variety
  • 4 stalks celery - diced
  • 1 cup carrots - diced
  • 3 green onions - chopped
  • 1/2 cup blue cheese dressing
  • blue cheese chunked for garnish
Container:grill, medium mixing bowl, shallow container, large serving dish

  • Preheat grill to medium.
  • In a medium bowl, mix together the hot sauce and oil.
  • Place the chicken breasts in a shallow dish and pour the hot sauce mixture over the chicken, turn to coat.
  • Place the chicken breasts on the grill and cook until no longer pink in the center, turning once during cooking. This should take approximately 5 minutes per side.
  • Remove the chicken from the grill and set aside while prepping the salad.
  • In a large serving bowl, combine the lettuce, celery, carrots and green onions.
  • Toss with dressing if desired or serve the dressing on the side.
  • Divide the greens among 4 plates.
  • Thinly slice the cooled chicken and place over the greens.
  • Serve with extra hot sauce and chunks of blue cheese if desired.
