3 tablespoons goat cheese
3 tablespoons half-n-half
2 tablespoons parsley - minced
1/4 teaspoon red pepper flakes
1 tablespoon lemon juice
salt and pepper to taste
2 pounds broccoli - fresh, cut into bite sized pieces
:mixing bowl, serving dish, large mixing bowl, large saucepan
Use a whisk or fork to mix together the goat cheese, cream, parsley, red pepper flakes and lemon juice in a medium mixing bowl.
Bring one cup of water to a boil in a large sacuepan.
Boil the broccoli in the water until crisp tender and then drain.
Place drained broccoli in a large mixing bowl.
Toss the cheese mixture over the top and gently mix to combine and coat the broccoli.
Season with salt and pepper.
Garnish with grated lemon peel if desired and serve warm.
*Note: The sauce is not very creamy but adds a great deal of flavor.
