12 ounces spicy sausage links - cut in 1/2 inch slices
1/4 cup olive oil
2 cloves garlic - crushed and chopped
2 onions - diced
1 red bell pepper - seeded, and chopped
2 cups long grain and wild rice - cooked
4 cups chicken broth
3 tomatoes - large sized, diced
1 teaspoon salt
1 teaspoon oregano - dried
1/2 teaspoon cayenne pepper
4 1/2 cups turkey - cooked and cubed
1 cup peas - frozen (optional)
:large skillet or pot, small skillet
Brown the sausage in a small skillet, drain on a paper towel to remove excess grease.
In a large skillet, heat oil over medium heat.
Add onion and garlic and sautÃ© until tender, stirring occasionally.
Add the bell pepper and cooked rice, stir to combine.
Add in the broth, tomatoes, salt, oregano and black pepper.
Bring to a boil, reduce heat back to medium and cook for approximately 15 minutes.
Add the sausage, turkey and peas.
Cook for five more minutes and serve hot with a crusty French bread.
