4 sweet potatoes, peeled and cut into 1/2
1/2 cup red bell pepper, diced
1/4 cup green onions, sliced
1/4 cup fresh flat leaf parsley, chopped
non-stick cooking spray
:Large serving bowl or platter
Spray all sides of sliced potatoes with non-stick cooking spray.
Grill potatoes over medium heat (350Â°F - 400Â°F) 5 to 10 minutes, depending on thickness of potato slices. Turn occasionally.
Cool slightly and cut into 1" cubes.
Combine potatoes, pepper, green onions and parsley in a large bowl; toss with vinegarette.
