Ingredients
3 pounds cooked lobster meat - chopped
1/2 cup celery - diced fine
1/2 cup red onion - diced fine
3/4 cup mayo, light or regular - or to taste
1/2 cup fresh lemon zest
1/2 teaspoon Old Bay Seasoning
salt and pepper to taste
1 tablespoon capers
4 tablespoons olive oil
1 baguette - sliced into 1/4 inch slices
parsley for garnish

Mix lobster meat, celery, onion, mayo, zest, seasonings and capers.
Chill in refrigerator.
Lay baguette slices on a baking sheet and sprinkle with olive oil.
Bake at 350° F until lightly toasted, approximately 5 minutes.
When cool, spoon generous amount of lobster salad onto each baguette.
Garnish with parsley.
