Sweet and Sour Glazed Brussels Sprouts Recipe

Brown sugar and cider vinegar bring out a slight sweetness in these Brussels sprouts.

4 tablespoons unsalted butter
2 tablespoons brown sugar
2 pounds Brussels sprouts trimmed and cut in half
2 medium onions - peeled and sliced into 1/8's, or 12 small shallots - halved lengthwise
1 tablespoon cider vinegar
salt and pepper to taste
Place rack in the center of the oven and preheat to 400°.
In a small microwave safe bowl, melt butter and sugar together in a microwave. (45 seconds)
Toss prepared Brussels sprouts and onions on a baking sheet.
Sprinkle with olive oil.
Pour butter and sugar mixture over the Brussels sprouts and onions.
Pour vinegar over brussels and onions.
Salt and pepper to taste.
Toss altogether on the baking sheet.
Roast until golden brown, approximately 30 minutes, stirring occasionally.
