Ingredients
4 vine ripened or Roma tomatoes, seeded and finely chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
2 teaspoons minced garlic
1/4 cup fresh lemon juice
3/4 cup canola oil
salt and pepper to taste
5 to 6 lobster mushrooms (or similar firm mushrooms), cut into bite sized pieces
5 ounces spring greens
2 ounces arugula or mizuna
16 ounces imitation crab

Combine tomatoes, parsley, basil and minced garlic in a large bowl.
In a small bowl, whisk together fresh lemon and oil and pour over tomato mixture. Salt and pepper to taste. Cover and chill for 30 minutes.
Place greens in a salad bowl. Layer imitation crab meat and lobster mushrooms. Toss with chilled dressing.
(The arugula provides a peppery taste and mizuma provides an earthy taste.)
