As mackerel cooks the flesh becomes firm and well flavored when prepared fresh from the market. The smaller filets are better tasting than the larger cuts of mackerel.

Ingredients
6 mackerel fillets (approximately 6 oz. each)
2 tablespoons lemon juice, adjust to taste
1/4 teaspoon freshly ground black pepper, adjust to taste
1/4 teaspoon salt, adjust to taste
1 teaspoon dried oregano

1 fresh lemon, cut into wedges

Preheat oven to broil. Lightly coat top of broiler pan with oil.
Lay mackerel fillets skin side down on broiler pan, drizzle lemon juice over each fillet. Sprinkle each fillet with pepper, oregano, and salt.
Broil approximately 7-8 minutes. Do not turn fillets. Fillets are done when they flake easily.
Garnish with fresh oregano. Serve while still hot with fresh lemon wedges.
Leftovers are great used in a salad.
