Cinnamon Apple Bread Recipe
Perfect with a cup of coffee, this cinnamon-flavored quick bread is moist and delicious. The apples add moisture, while the cinnamon and sugar add a boost of flavor.

1/3 cup brown sugar
1 teaspoon cinnamon
2/3 cup sugar
1/2 cup butter or margarine
1 1/2 teaspoons vanilla
1 1/2 cups flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple - peeled and diced
:9 x 5 inch loaf pan
Preheat the oven to 350° F. Grease and flour the bottom and sides of a 9 x 5 inch loaf pan.
In a small bowl, stir the brown sugar and cinnamon together; set aside.
In a mixing bowl, combine the white sugar and butter; cream with electric mixer until smooth. Add the eggs and vanilla; beat until well mixed.
Add the flour and baking powder; mix just until dry ingredients are mixed in. Add the milk and beat until smooth.
Pour half of the bread batter into the prepared loaf pan; spread out evenly. Add half of the apples and spread out evenly. Sprinkle half the cinnamon and sugar mixture over the apples. Pat the apple and cinnamon mixture slightly into the batter.
Pour the remaining batter on top; spread out evenly. Add the remaining apples; sprinkle with the remaining cinnamon and sugar mixture. Press lightly into the batter.
Place in the preheated oven and bake for 30 to 40 minutes. The bread is done when a toothpick inserted in the middle comes out clean.
Cool for 10 minutes in the pan and then turn out onto a wire rack to cool completely before slicing.
