Rolled Cinnamon Cookies Recipe

1 cup butter - softened
1 1/4 cups sugar
3 egg yolks
1 tablespoon honey
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1/2 cup sugar
1 tablespoon cinnamon
8 ounces white baking chocolate
1 teaspoon honey
Preheat the oven to 350 degrees F.
Cream together the butter and 1 1/4 cups of sugar until light and fluffy.
Add the egg yolks, 1 tbsp. of honey and the vanilla; beat until well mixed.
In a separate bowl, combine the flour, baking powder, salt, and cream of tartar. Gradually add to the creamed mixture; beat until well mixed.
Combine the cinnamon and 1/2 cup of sugar; stir until mixed and set aside.
Take a heaping tablespoonful of dough and roll into a 6-inch long log. Roll the log in the cinnamon and sugar mixture.
Coil the log into a spiral shaped cookie and place on a lightly greased cookie sheet or on parchment paper. Repeat to fill the cookie sheet, placing cookies about one inch apart.
Sprinkle the cookies with extra cinnamon and sugar.
Place in preheated oven and bake for 8 to 10 minutes or until firm. Cool on a wire rack.
Melt the white chocolate and then add 1 tsp. of honey; stir until smooth and drizzle over the cookies.
Allow cookies to stand until the white chocolate is set. Store in covered container.
