Mushroom Barley Casserole Recipe

  • 1/2 pound fresh mushrooms
  • 2 tablespoons butter or margarine
  • 1 onion (chopped) (large)
  • 1 cup medium barley (rinsed)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon pepper
  • 4 cups chicken broth (heated)
Wash mushrooms and cut in quarters.

Melt butter in pan.

Add mushrooms and onions. Sauté until tender.

Add barley and brown lightly.

Stir in spices.

Add mixture to a 3 qt casserole dish that has been sprayed with cooking spray.

Add chicken broth and mix.

Cover well with foil and bake at 350 for 90 minutes.
