Italian Cheese Zucchini Casserole Recipe

  • 1ST LAYER:
  • 1 pound Ground Beef
  • 1 teaspoon Salt
  • pepper to taste
  • 2ND LAYER:
  • 3 pounds zucchini
  • 2 tablespoons oleo
  • 1 Onion - diced (Medium)
  • 1 cup cheddar cheese
  • 3RD LAYER:
  • 2 Eggs
  • 2 cups cottage cheese
  • 2 tablespoons parsley (optional)
  • 2 tablespoons Parmesan cheese
lst layer: Brown beef and spoon into baking dish. 2nd layer: Cook and drain zucchini. Mash and whip in butter and onion and spread over meat. Sprinkle on cheddar cheese. 3rd layer: Beat eggs until fluffy. Fold in cottage cheese and parsley. Spoon over zucchini mixture. Sprinkle with Parmesan cheese and bake 35 minutes at 350°.
