Cauliflower and Turkey Kielbasa Recipe

  • 1 head cauliflower, cut into florets
  • 3 tablespoons capers
  • 8 ounces turkey kielbasa, diced
  • 3 tablespoons lemon juice
  • 1/2 cup golden raisins
  • 3 tablespoons olive oil
  • 4 tablespoons butter or margarine
  • 1/2 teaspoon Salt
  • 1/2 teaspoon pepper
  • 1 teaspoon sugar
  • 2 tablespoons water
Brush a baking pan with olive oil, layer cauliflower florets , sprinkle with salt and pepper. Roast in a 425° oven for 20 minutes. In a skillet, melt butter, sauté kielbasa for few minutes. Add lemon juice, water, sugar, raisins and capers, cook for a minute. Pour over cauliflower, mix and roast for 10 more minutes.
