Ingredients
5 pounds new red potatoes
1/4 cup butter (melted)
2 1/2 tablespoons fresh parsley (chopped)
1/2 teaspoon dried dill
Kosher salt
pepper
Directions
Wash and pat dry potatoes and cut them into quarters. Place them in a 9x13 inch baking pan.
Add melted butter, parsley and dill together and stir. Drizzle mixture over potatoes, toss to coat evenly, and sprinkle with salt and pepper to taste.
Bake at 375° for 35 - 40 minutes or until tender when poked with fork. Turn potatoes once or twice during the baking time.
