Chilled Marinated Vegetable Rice Salad Recipe

  • 3 teaspoons Heinz apple cider vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon sugar
  • 1/2 teaspoon Salt
  • 1 cup quartered cherry tomatoes
  • 1/2 cup sliced ripe black olives
  • 1/3 cup chopped red onion
  • 1/2 cup chopped cucumber
  • 1 cup feta cheese
  • 2 cups white or brown cooked rice, (no added butter or salt), cooled to room temperature
For marinade: combine first five ingredients in a mixing bowl. Add vegetables to marinade and toss to coat. Cover and chill; add rice and toss lightly to combine. Makes 8 servings.
