Blue Cheese Crisps 2 Recipe

  • 8 ounces blue cheese, at room temperature
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 3/4 cups flour
  • 1 teaspoon black pepper
Cream cheese and butter until light.

Add egg and mix well.

Add flour and pepper. Mix quickly but thoroughly.

Shape dough into 2 logs, wrap in waxed paper or saran wrap and refrigerate overnight.

Slice into 1/8" rounds and bake on ungreased cookie sheet for 10-15 minutes at 375°.
