Ham and Veggie Pasta Salad Recipe

Full of fresh veggie crunch, this salad is perfect on its own as a light meal or as a side to grilled burgers.

  • 3 cups elbow macaroni (uncooked)
  • 1 1/2 cups ham cubes
  • 1/2 cup frozen peas, thawed and drained
  • 1/4 cup sliced carrots
  • 3/4 cup cauliflower (small bit size pieces)
  • 1/2 cup diced celery
  • 3 hard boiled egg, chopped
  • 2 cups Miracle Whip Salad Dressing
  • 1/2 tablespoon sugar
  • salt and pepper, to taste
1.5 hrs
  • Cook macaroni per directions on package; drain and rinse with cold water; drain well again.
  • Combine drained macaroni with all other ingredients except salt and pepper; mix lightly.
  • Season with salt and pepper to taste.
  • Add additional salad dressing before serving, if desired.

"I have tried a couple of different macaroni salad recipes but haven't found one we really like until now. It had just the flavor I was looking for in a macaroni salad. I think it was the addition of the hard boiled eggs that did it. My husband thought it was good also. We will be making this one again."
