Chicken Soup "white chili" Recipe

  • 6 chicken breast (or 1 whole chicken)
  • 6 cups broth
  • 1 can green chilies (small can)
  • 3 cans Bush Northern Beans
  • 2 onions - diced
  • 2 cloves garlic-minced
  • 1 teaspoon cumin
  • salt and white pepper to taste
Boil chicken and reserve broth. Cut up chicken. Add beans to broth. Saut onions in small amount of oil until clear and tender, add garlic and saut one minute more. Add onions and garlic to broth. Add cumin and salt and white pepper. Add chicken and green chilies and let simmer 30 minutes longer. Serve with grated cheese and corn chips (or cornbread).
