Hearty Beef Vegetable Soup Recipe

  • 3 pounds beef stew meat, trimmed & cut to bite-sized pieces
  • 1 cup chopped onion
  • 1 clove chopped garlic
  • 1/4 teaspoon ground fresh pepper
  • 1 1/2 teaspoons Italian herb seasoning
  • 3 cans each) beef broth (14 ounce cans)
  • 2 tablespoons olive oil (for browning meat)
  • 1 can stewed tomatoes, undrained (16 ounce can)
  • 1 can dark red kidney beans, undrained (14 ounce can)
  • 2 cans small) sliced black olives, undrained
  • 1 can kernel corn, undrained
  • 3 zucchini, peeled & sliced (small)
  • 1 1/2 cups sliced carrots
  • 1 cup small shell macaroni noodles
Brown meat in olive oil. Add onions, garlic, pepper & seasoning, along with 3 C. water & beef broth. Cover and simmer 1 hour.

Add remaining ingredients, cover and simmer 45 minutes. Sprinkle individual servings with parmesan cheese and serve.
