Chicken Breasts With Mushroom And Cheese Recipe

  • 3 boneless, skinless chicken breasts, cut inch bite-size pieces
  • 2 Eggs, beaten
  • 1 cup Italian bread crumbs
  • 1 cup chicken broth
  • 5 slices Monterey Jack or Swiss cheese
  • 1/2 pound fresh mushrooms, sliced
Sprinkle salt and pepper over chicken. Immerse in beaten eggs for 2 to 3 hours. Drain and roll in bread crumbs; brown in butter. Place chicken pieces in a single layer in 9x13" baking dish. Add chicken broth. Top with mushrooms and cheese. Bake at 350° for 30 minutes. Serves 4.
