Irish Lamb Stew in Crock Pot Recipe

  • 2 pounds boneless leg of lamb, trimmed of excess fat
  • 2 pounds potatoes, peeled
  • 3 carrots, peeled
  • 3 stalks celery
  • 3 leeks (white part), halved (large)
  • 14 ounces vegetable broth
  • 2 teaspoons fresh thyme, chopped
  • salt & pepper to taste
  • 1/4 cup packed parsley leaves, chopped
Cut lamb, potatoes, & carrots into 1-inch pieces.

Wash & thinly slice celery & leeks

Place all ingredients in crock pot & stir to combine.

Cook on low for 8 hours.

Stir in parsley, then serve.

Serves 8.
