Yummy Chicken Taquitos Recipe

Delicious appetizer or entree. Flour tortillas will hold their shape better but corn tortillas, despite the way they look, taste so much better. Serve them with some salsa.

  • 4 chicken breasts
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 can diced green chilis
  • 1 cup shredded mexican blend cheese
  • 10 corn tortillas
  • 4 tablespoons oil

Boil chicken until cooked through; allow to cool and then shred with fork.

In a mixing bowl, combine chicken, soup, sour cream, chilis and cheese. Mix well and spoon into corn tortillas. Roll them up.

Fry in a small amount of oil until golden brown or you can bake them in a 400 degree F preheated oven for 18-20 minutes.

"This was delicious but what a mess! The corn tortillas fell apart as I was filling them. If I would have layered it in a pan instead of trying to roll them, I bet it would have earned 5 stars. Because the flavor was there."
