Couscous and Chicken Vegetable Casserole Recipe

  • 1 1/2 cups Couscous cooked (can substitute grain of choice: rice, quinoa, etc)
  • 1/2 cup cooked chicken diced small
  • 1 carrot diced small (medium)
  • 1 stalk celery diced small
  • 1 onion diced small (medium)
  • 1/2 tablespoon diced garlic
  • 1/2 cup grated cheese (optional)
Saut vegetables in olive oil until tender

Mix all ingredients together and put in deep baking dish

Bake in preheated oven at 350 for 15-20 minutes. (Serves 4.)
